As Fernleigh continues to grow, we are looking for an experienced and enthusiastic Sous Chef to join our kitchen team. This is an exciting opportunity for someone who is passionate about fresh, high-quality food and would enjoy helping to develop the food offering at one of Chichester’s most distinctive venues.

The role

Working closely with our Head Chef, the Sous Chef will play an important role in the day-to-day running of the kitchen. You will help maintain consistently high standards across our brunch and lunch menus, afternoon teas, private events and occasional evening service.

You will also support the Head Chef with menu development, team supervision, stock management and ensuring the kitchen operates safely, efficiently and professionally.

Key responsibilities

  • Supporting the Head Chef with the daily operation of the kitchen
  • Preparing and presenting dishes to a consistently high standard
  • Supervising and supporting other members of the kitchen team
  • Taking responsibility for the kitchen in the Head Chef’s absence
  • Assisting with the creation of seasonal menus, specials and event catering
  • Helping to manage food preparation, portion control and service
  • Monitoring stock levels, placing orders and minimising food waste
  • Maintaining excellent standards of cleanliness and organisation
  • Ensuring all food hygiene, allergen and health and safety procedures are followed
  • Supporting the training and development of junior team members
  • Working collaboratively with the front-of-house and events teams
  • Helping to deliver private functions, afternoon teas and occasional evening events

About you

We are looking for someone who:

  • Has previous experience as a Sous Chef or an experienced Chef de Partie ready to progress
  • Is passionate about fresh, seasonal and beautifully presented food
  • Can remain calm, organised and dependable during busy services
  • Has strong communication and team leadership skills
  • Takes pride in maintaining high standards
  • Understands food hygiene, allergens and kitchen safety requirements
  • Is comfortable working independently when required
  • Has a positive attitude and enjoys contributing ideas
  • Is flexible and willing to work across a rota, including weekends and occasional evenings

This is a full-time position working on a rota basis. Weekend availability and occasional evening work will be required
